Island Flavours, Artfully Crafted We draw inspiration from Hainan’s volcanic craters, coconut groves, fishing harbours and Li villages, combining iconic local ingredients – Dongshan lamb, Hele crab, Wenchang chicken – with indigenous elements like fermented lees vinegar, aged salt and pandan leaves.
